One of my favourite breakfasts has always been pancakes slathered with butter and maple syrup. And its even better when there is bacon on the side. Well what about all of that in one bite? These breakfast bites are full of all of your favourite ingredients. Prep them the night before for an easy breakfast. Just heat them up and enjoy.
- 1¾ cups all-purpose flour
- 1½ tsp baking powder
- ½ tsp baking soda
- 2 tbsp sugar
- 1/2 cup unsalted butter, cut into cubes
- 1 cup pure maple syrup
- 2 eggs (beaten)
- 1/2 cup milk
- 1 lb bacon cut into cubes (thick bacon works best)
- 1 tbsp vanilla extract
Preheat oven to 350 degrees.
Cook bacon cubes until crispy transfer to a paper towel and let cool.
Combine Flour, sugar, baking soda and baking powder mix well. Add butter cubes and cut into the dry ingredients until its into pea size pieces with either a fork or pastry cutter.
Add Eggs, milk , vanilla, and maple syrup. Mix with flour mixture. Stir in bacon cubes.
Pour into lined muffin tins and bake for 40 mins or until done.
